Pool party

There's something about a bare foot artist that just makes me giddy! We had just had a 'date' - a picnic lunch on his studio floor and a movie on his DVD. Once done, he's right back at the canvas - such dedication!
Peaches are the most perfect fruit! One of these is a decoy, the kids can eat them while I can the other, or make peach cobbler! I'll share the recipe I tried today...so yummy!


Southern Peach Cobbler *this is an after post comment - but this makes enough for 10 people!

Ingredients
20 fresh peaches - peeled, pitted and sliced into thin wedges
1/2 cup and 2 tablespoons white sugar
1/2 cup and 2 tablespoons brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2-1/2 teaspoons fresh lemon juice
1 tablespoon and 2 teaspoons cornstarch

2-1/2 cups all-purpose flour
1/2 cup and 2 tablespoons white sugar
1/2 cup and 2 tablespoons brown sugar
2-1/2 teaspoons baking powder
1-1/4 teaspoons salt
3/4 cup and 3 tablespoons unsalted butter, chilled and cut into small pieces
1/2 cup and 2 tablespoons boiling water

MIX TOGETHER:
1/3 cup and 2 tablespoons white sugar
2-1/2 teaspoons ground cinnamon
DIRECTIONS
1. Preheat oven to 425 degrees F (220 degrees C).
2. In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly, and pour into a 2 quart baking dish. Bake in preheated oven for 10 minutes.
3. Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt. Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal. Stir in water until just combined.
4. Remove peaches from oven, and drop spoonfuls of topping over them. Sprinkle entire cobbler with the sugar and cinnamon mixture. Bake until topping is golden, about 30 minutes.




Danni won a $50.00 gift card to Walmart from the library's summer reading program. As soon as she found out she decided she was going to get a swimming pool. We went to Walmart and found a pool discounted 50%, then found a 'My Pretty Pony" pack of six, also discounted. This left just enough for either a movie or some underwear and a shirt. She choose the movie. As we were walking down the aisle she stopped the cart and decided she need3ed the underwear more. She prudently returned the movie and picked out some underwear, a shirt and even a candy bar. I know, what kind of mom makes her kid buy her own underwear? (me)
This is where having a sibling closer in age would come in handy, here's a call out to any friends....come play while it's still warm!

Danni looks like she choose the perfect gift for herself with her Walmart gift card! You can't get more fun than a pool in your own backyard, and with a slide to boot! We too took a peruse through the clearance section of the summer items and bought a small frog pool. We're looking forward to trying it out next week.

I can't wait to try your cobbler recipe, although i think I'll cut it in half!
